Sure, you can sip Assam for breakfast. We encourage it. But we're not going to call this tea the classic "English Breakfast," because that typically refers to a blend of lesser quality teas. These are big, black, organic tea leaves grown in Assam, India, where hot days and cool nights bring out a rich, full flavor.

This is the tea at which I have worked hardest over the years. I first fell in love with Assam teas when in South Asia. I just loved how full, sweet, round, and delicious a great Assam tea was. When we started visiting the Assam region, we found a somewhat unexplored part of India with good reason - there are many insurgencies still going on in Assam making it one of the more dangerous areas to visit. We also found it very very difficult to find great Organic tea in Assam. This region’s teas are so prized that they have no problem selling all their tea as conventional. At my last count there were only 4 gardens growing Certified Organic tea there out of hundreds! Assam is a river  bottom region - the Brahmaputra river flows through the entire region. This river drains a massive area north of the Himalaya, an area almost the size of the continental US. When it flows through Assam on its way to the Indian Ocean, it is up to 6 miles wide! The area is hot and humid and the ground is black fertile dirt - beautiful. This gives lots of nutrients to the tea plants which in turn give them great flavor. 

Unlike Darjeeling, in Assam the 2nd flush (harvest) gives generally the best leaf. This means that we focus our buying on just a few week’s harvest out of the entire year!

This year Assam experienced a Spring drought so the great tea is even more difficult to come by.

I drink at least a cup of Assam every morning. I like it with or without milk. With milk I will give it a long steep - almost 7 minutes and almost to the point of getting “stewed.” Without milk, generally 4 - 5 mins is enough.

This is an exceptional black tea and my personal favorite. I prefer it to other breakfast teas in the same way I prefer single malt whisky to most blends - this Assam has a concentrated, singular flavor, clean and refined. Tea is my thing and I have drunk tons of it through my life and have experienced many high quality specialty teas. I use loose teas and prepare them carefully. Recently, my husband brought me a gift of Two Leaves and A Bud organic Assam. The taste just burst in my mouth! I had not realized how tasteless my other teas are. After 6 weeks of having your tea in my home, I have ignored all the others except very occasionally and when I have a cup of the others, am reminded all over again of the incredible quality difference. This is my absolute favorite tea! I add about two teaspoons of honey and it is perfect. I am very picky about my black tea and this lives up to my expectations! Organic Assam is is the tea I love, gutsy enough to stand up to milk or cream, but with a gorgeous malty, smooth flavor. I usually buy single estate loose tea, but tried this bagged tea at a quaint inn and it was perfect.
