Paisley English Breakfast is my first-thing-in-the-morning tea. It is stronger and darker that the Two Leaves whole leaf Assam Breakfast and brews up super-fast. I really prefer 2 bags in a large go-cup with a really short steep. This gives me a strong black astringent cup that holds up to whole milk.
When I first started working on Paisley English Breakfast I gave myself a difficult mission - This bag has to be as good or better than the best of the English tea bags but it has to be Organic and Fair Trade. This is more difficult than you might imagine: Organic tea is less than 1% of the world’s production. Quality organic tea is a small fraction of this. And all the very very best tea gardens don’t need to be Organic Certified - they sell all their tea at a high price just as it is. After more than a year of work, we arrived at a tea that more than rivals the best of the English.
